It is snowy today outside.
I received my Amazon package with cocoa butter. I don’t have much choice for shopping online since only few companies mail to Alaska at all. What the heck, I can’t understand, its like not America here! What the difference – to fly from Florida to Seattle or from NY to Alaska?
Anyway, I’m happy I can experiment with making my own chocolate in Thermomix, I couldn’t find any recipe online. I know it contains cocoa butter, cocoa powder and sugar, but what are the ratios? I found this old cooking book on chocolate from 1909 ( how cool, for those who interested in history of cooking there is a bunch of old cookbooks for free) but, even then they were using baking chocolate chips, what surprised me. However, in those days they didn’t have soy lecithin, good for them, but what about us? Its impossible to find any chocolate at the store without soy lecithin anymore.
So, first time I tried it came out too soft, I added a little bit of coconut oil, just because I like it and its good for you.
Next day I remixed it with extra cocoa butter to make them harder.
The taste was very good and it looked pretty, but still they were more like truffles.
Oh, and the colors of chocolates, looks like has white chocolate on top, that was an accident, pretty though, but my guess its because the mixing temperatures were different, so it separated and it is true that white part is white chocolate: cocoa butter and sugar :).
Update: Then, I learned, that it is impossible to make real chocolate at home. I made them once more, just to use the rest of cocoa butter. I researched more and found the only affordable company who still makes chocolate chips from 3 ingredients: Cocoa butter, cocoa powder and sugar, its “Enjoy life”, you can buy them from iHerb.com from my side bar.
